The nose is absolutely stunning giving you generous peach, vanilla and light honey aroma's which draw you in. The palate has has plenty of fruit up front with lovely fresh flavours of peach & melon well balanced with butter and great use of acid which makes this a great well balanced wine with plenty of personality. Winemaker's Comments: Specially selected parcels of Chardonnay were harvested in the cool of the night to preserve varietal fruit flavours. The fruit was crushed into Mcwilliam’s drainers where the premium free-run juice was extracted, chilled and settled for 36 hours. From this juice, selected parcels of Chardonnay were fermented in stainless steel
tanks to maintain delicate fruit characters whilst the remaining parcels were fermented in a combination of French oak barrique and hogshead barrels. A portion was put through Malo-lactic fermentation to add richness and complexity to the wine’s character prior to bottling.
Colour: Pale straw with green hues.
Aroma: Apricot kernel, peach and melon dominate, with hints of vanilla and honey. Fine pencil and cedar French oak characters are beautifully supported by creamy butterscotch characters that show through from the influence of malo-lactic fermentation.
Palate: Dominating the front palate are fruit flavours of peach, rockmelon and fresh tropical fruits. The wine has a balanced natural acid providing both structure and length finishing with intense fruity flavours. Blend: Chardonnay Region: 58.19% Riverina, NSW; 12.97% Margaret River, WA and 28.4% others. Cellaring Potential: Drinking Well now or will reward with another 5 years in the cellar
