The bouquet faintly aromatic, hints of florals and pear. De Bortoli Windy Peak Pinot Grigio is light refreshing palate with gentle floral and herbal fruit flavours. Suggested Cuisine Antipasto. General Characteristics Dry / Light Bodied Vintage Conditions 2012 produced highly aromatic and textural Pinot Grigio in the King Valley. Cool conditions and timely rainfall have given good fruit maturity and natural acidity. Winemaking Fruit was harvested and pressed without crushing to retain varietal character and freshness and to avoid any pink colour pick up. Winemaking techniques included must chilling to 5°C, gentle pressing, warmer fermentation with fine solids and extended time on light lees. These all contribute to improve complexity, texture and softness while preserving varietal expression.
